Although I love cheesecake an awful lot, it’s not something that I can eat as often as I’d like. I mean, there’s no problem with me, I would be able to cook (and eat!) one everyday; but you know that you’ve been having way too much cheesecake when there are tears in your friend’s eyes when you tell them what’s for dessert again.
Which I still don’t get is how anyone could ever get tired of eating cheesecake. There’s not such thing as a cheesecake overload, it’s never too much!
BUT. They’re weird. So weird that they seem to stop liking cheesecake when they’ve been having it for dessert like four weeks in a row. Bizarre, right?
So they asked me to make any other different dessert. Anything, they beg, but not cheesecake again.
And does it mean I can’t get any cheesecake?? Because sure I’d be able to make one just for myself and polish it off on my own (did you even doubt it?), but let’s be honest, that’s not the best thing that could happen to my skinny jeans, is it??
That’s why I made up these popsicles. Creamy, tangy, sweet, cheesecake-y goodness perfectly portion controlled that you can put together in seconds. What’s not to love about it?
I healthified my recipe for Oreo Cheesecake
, making it lighter so I could have two. Hey, don’t look at me like that, old habits die hard!
Honestly guys, these are so so so good that will satisfy any cheesecake craving you can have. And they’re in popsicle form, c’mon who doesn’t love popsicles?? It’s like cheesecake on a stick, now that’s fabulous!
So guys make these and don’t share them with the cheesecake haters in your life. Because they’ll surey want some once they see how delish they look. But hey, they said they wanted no more cheesecake, so noy way I’m sharing these! 😉
Skinny Oreo Cheesecake Popsicles
These taste just like cheesecake on a stick, but they're bit healthier!
- 250 gr. 2% greek yogurt
- 250 gr. light cream cheese
- 2 vanilla sugar sachets (16 gr. or 1tbsp.)
- 1 tsp. lemon juice (optional, but it adds the cheesecake characteristic tangyness)
- a few drops of stevia extract, or to taste
- 5 oreos (crushed)
- This is easy peasy, guys. Whisk all of the ingredients (except oreos!) with an electric mixer. You can also do it by hand, but make sure that your cream cheese is softened, otherwise it would be impossible to mix. Crush the oreos and add them to the mixture. Spoon the mixture into the popsicle molds (it isn't going to be pourable) and freeze until solid.
