Banana Greek Yogurt Waffles with Chocolate Chunks

Is it Friday already?

Then be all welcome to one of the most exhausting weekends of my life! *sighs* I really did not want the weekend to come, because it means that I’ll have to work in the fields in order to get a decent camera. Grape harvesting. Lots of hours. Add half-marathon training, school, homework, cooking all my meals for the upcoming week (in which I have to work as well), and did I mention lots of homework?


What do you get? A worn-out, tired little girl, ie: ME.

At least it will be worth it, because I plan on indulge on waffles, cheesecake and flaky croissants (which I’ going to photograph with my new camera *yells* I’m so excited, I’ll finally get a proper one!) as soon as the harvesting is over. Dessert, dessert, dessert. I’m so missing dessert right now, can you tell?

And oh, I’m sorry. I didn’t mean this to be a whiny post, but one full of waffles, chocolate and all things nice. My apologies.

 

 

But here you have the waffles. Healthy, quick to make (just 10 minutes, win!), freezable waffles. And they’re the perfect way to use up overly ripe bananas. Really black bananas that could give you nightmares just by looking at them… I swear they had been sitting on our counter for like… two months?? I don’t know, I think that it was still Spring last time that mum bought bananas. You get the picture… they were the uggliest, most-disgusting bananas you’ll ever read about. Although they were totally edible. And yummy, they made these waffles totally amazing.

(Sorry again this wasn’t mean to be  a gross post… I might or might have not gone crazy describing my bananas)

 

 

Although if you don’t happen to have bananas which have been laying around for months, you can always use ripe bananas… but if you do love the banana flavor, you want to make sure they’re super ripe, ok?

As well as bananas, I also added a few more healthy ingredients so I could feel great about eating them for breakfast: enter greek yogurt, whole grains and super dark chocolate. And yes, I actually had these for breakfast instead of my beloved olive oil morning toast, which means that these must be awesome, because I NEVER skip my toast. ((For the record, I had to have my toast for dinner… my day wouldn’t have been complete without it)). I might have a slight obssesion with toasts. Yeah.

 

 

I should be done with this post like right now, because I still have loads of work to get done, but man, it feels so good to be blogging under a blanket instead of working in the fields… I’ll have to think about the camera when I’m back to work! I’m so excited to finally get one!

 

Banana Waffles with Chocolate Chunks

Serves 6 waffles
Allergy Egg, Milk, Wheat
Meal type Breakfast, Dessert
Misc Child Friendly, Freezable

Ingredients

  • 1 cup whole wheat flour
  • 1 cup bread flour (you may use all purpose)
  • 6g baking powder
  • 2 tablespoons brown sugar (adjust depending on bananas' sweeteness)
  • 2 Small over ripe bananas
  • 1 tablespoon light olive oil
  • 1 Large egg (whisked)
  • 1 cup low fat milk
  • 1 cup fat free greek yogurt
  • 50g dark chocolate (chopped)

Directions

1.
. Preheat waffle iron. Mix all of the dry ingredients in a bowl and all of the wet ones in a separate one.
2.
Stir dry ingredients into the wet ones and stir until a thick batter forms.
3.
Add chocolate chunks.
4.
Cook acording to your waffle maker instructions.

Note

Top with more melted chocolate (because no amount is ever enough, right?) and greek yogurt.

These can be frozen and reheated in a toaster, but they end up a bit more crispy (which I find nice)

    ooo these look incredible. There’s nothing better than homemade waffles! Love the idea of using banana in them. Although I’m pretty sure I’d end up smothering them in honey as well as the yoghurt and chocolate. I’d happily trade you grape harvest for office work for a day!

    So much homework indeed! Don’t you ever feel like maintaining a blog is way more than you signed on for? Always seems to be worth it in the end, though. Anyway, hang in there and I’m rooting for you between all the textbooks and projects and blog posts 😉
    I’m such a fan of the whole wheat waffle, and these just look so pretty and crisp. I haven’t had access to a waffle iron in ages, so I’ve been settling for pancakes every time.

    You’ve done it again…these looks amazing! Really ripe or over-ripe bananas are perfect for using in baked foods. They are so much more flavorful and sweet.       Thank you! A Belgian Waffle Iron I think it is… although I’m not sure. I bought mine at Lidl sp it’s not a quality one, but it makes mean waffles 😉
