Roasted Red Pepper and Tomato Soup

Welcome to the new Honey & Figs blog! I finally got my own domain name and move blog thanks to the help from Deby at Moms Make Money. I’m so so grateful for everything she’s made for me. Go check her wonderful services here!

Now let’s move to the soup. Best soup ever, to be exact.

 

 

You know how I always have a hard time trying to decide whether I like summer or fall foods better. On the summer side you have ice-cream, fro-yo, cold drinks and lots of fresh produce. And then, on the fall side there’s apples, caramel, cinnamon and spice and warm cozy soups… I really don’t know which side I’m in. But this soup? Oh boy, this is truly the best of both worlds: fresh summer tomatoes, peppers and garlic roasted to perfection and then simmered to get a comforting soup which warms the soul and gets you in the mood for oversized sweater weather while reminding you of summer. It doesn’t get any better than this!

Even though it’s not exactly the quickest soup ever, it reheats wonderfully and it’s awesome too when it’s cold. That’s great since I’ll be back to school tomorrow (!!!) and I won’t get round to make as much soup as I’d like. I’d better be preparing a make-ahead recipe round-up, because I’m sure I’m so going to need it! This school year is going to be so so weary, being my last year as a high school student. And I’ll also have to keep up with this blog, because you guys know I don’t plan to give it up; as well as attend swimming lessons, train for a half-marathon (I’m so excited about it!!!) and improve my photography since I plan on getting a proper camera soon (yay!). It’s going to be quite hectic, but I think I’ll be able to cope with it all, because things don’t seem to be so hard when you truly like what you’re doing.

Oh God, I really hope it isn’t too hard.

I can always have soup if things get rough. This one is so comforting that I think it’ll get me through everything… gruelling school year included.

 

 

Roasted Red Pepper and Tomato Soup

Serves 4-6
Dietary Diabetic, Vegan, Vegetarian
Meal type Lunch, Side Dish, Soup
Misc Pre-preparable, Serve Cold, Serve Hot
Make the most of late summer produce with this roasted pepper and tomato soup. Thick, comforting and delicious!

Ingredients

soup

  • 12 roma tomatoes
  • 6 red bell peppers
  • 1 head garlic (roasted)
  • 1 onion (julienned)
  • 4-5 leaves fresh basil (finely chopped)
  • drizzle balsamic vinegar
  • drizzle extra virgin olive oil
  • 1 dash hot sauce
  • dash salt (to taste)

to serve

  • greek yogurt, goat cheese, sour cream ((optional))
  • crusty bread ((optional))

  • 3-4 cups vegetable broth (depending on how thick you like the soup, I went for 3 cups)

Directions

1.
Halve the tomatoes and quart them.
2.
Cut the pepper into chunks. Make them as big as the tomato chunks so they roast at the same time.
3.
Arrange the tomatoes and peppers in two baking trays (you might need 3 trays if yours aren't too big). You can roast the garlic at the same time too.
4.
Drizzle them with balsamic vinegar, olive oil and add salt to taste.
5.
Turn your oven's broiler on and broil both the peppers and tomatoes at 230ºC until they look charred (this should take about 30-35 minutes)
6.
If you don't want peels in the soup, you should wait for the peppers and tomatoes to cool and then peel them off. I skipped this step because I'm not bothered by peels in the soup.
7.
Heat some olive oil in a saucepan and when it's warm, add the onion and fry until fragant.
8.
Add the tomato and pepper chunks, as well as the roasted garlic (you have to squeeze it), the basil and the vegetable broth.
9.
Simmer for 5-10 minutes so the flavors meld together.
10.
Add a dash of hot sauce and more salt if needed.
11.
Pure with an inmersion blender until desired consistency is reached.
12.
Serve with crusty bread or grilled cheese.

    Wow, sounds like you’re going to have a lot on your plate (pardon the pun…) but you can do it! Maybe just focus on speedy and make-ahead meals? Everyone loves those sorts of recipes anyway. I *love* the new look of your blog and the look of this soup :-) I would love it with cheese and bread, mmmm..
