Spicy Hummus, Grilled Chicken and Vegetables Quesadillas

Happy Monday everyone! And for once, I’m actually happy that weekend is over, because last one was an exhausting, gruelling one. I’ll keep today’s post short and sweet, since you guys now how busy I am these days, ok??

 


 

Who doesn’t love quesadillas? They’re an easy and healthy dinner that you can have ready in minutes; and you get to use up whatever is laying on your fridge. What’s not to love about it?

 

I like to keep a big container of Homemade Spicy Garlic Hummus on hand, because it’s a wonferful way to kick up lots of foods, and it adds so much creaminess! Besides hummus, I also like to have some kind of leftover cooked chicken: grilled or roasted tights, sauteed breasts, poached shreeded breasts, etc. They’re nice ingredients to have when you’re low on time and need to find the way to add more protein to your meals. And last but not least, my fridge is always stocked with lots of fresh vegetables which is amazing this time of the year, because  we’re still getting homegrown produce such as zucchinnis, tomatoes, onions and eggplants. I’ll be so sad when the season is over!

 

 

These quesadillas are the perfect dinner to whip up using whichever veggies and leftover meat you have on hand. A layer of spicy, garlicy hummus, topped with flavourful grilled (or stir fried if you’re short on time) veggies and juicy chicken tights and then sprinkled with a bit of cheese… Don’t they look like the perfect dinner to you?

 

Spicy Hummus, Grilled Chicken and Vegetables Quesadillas

Serves 2

Ingredients

  • 4 flour tortillas (wholegrain if you can get them)
  • 2 Small skinned chicken tights (grilled)
  • 1-2 Cups sliced vegetables (onion, eggplant, zucchinni, bell peppers, etc)
  • 1-4/1-2 cup spicy hummus (link below)
  • a handful cheese (shredded)

Directions

1.
Slice all the veggies and either grill them or stir fry them for 5 minutes for a quicker option.
2.
Cut chicken (which should be cooked, this recipe is a nice one to use up leftovers) into chunks.
3.
Spread a layer of hummus on two of the tortillas and top them with chicken, veggies and cheese.
4.
Top with the remaining tortillas and cook in the oven for 10 minutes or so until cheese is melted.

Note

Amounts of each ingredient are orientative, use as much as you'd like!

If you don't have chicken leftovers, you can stir fry some chicken breasts or simply omit it altogether. It'll be tasty anyway!

I suggest using a mild cheese so it doesn't overpower the rest of flavors. Even low fat cheese would be nice here.

    Quesadillas are a perfect weeknight meal – you can change them up easily and they don’t take long! Love this version with the spicy hummus and plenty of veggies!
