It’s only early November and I’ve already started Christmas cookie baking. I’ve made 7 batches over the last three days; I’ve got like 3 metal tins full of them; I’ve got my mouth full of almond cookies, crumbs all over my chin; and my kitchen smells like a bakery-shop.
Life’s good right now.
I’ve been playing a lot with butter, sugar, oil, flours and more butter these days; I kinda should have made one or two health-ish batches, but guess what, I haven’t (((yet)). Thing is that, while I like sugar and butter better than artificial sweeteners and margarines, they don’t make me feel my best, like, they make me sluggish and tired and oh, they make my skin look terrible too. Have you guys ever watched “The Lord of the Rings”? You know the orcs? Yeah, sugar makes me look like that, no joke.
But I like the sweet stuff. A lot. I can’t go for too long without having any kind of dessert, which most of the time is a healthy one, but it still needs to be somewhat sweetened, right?
((For the record, I do look like an angry orc if I don’t have my dessert as well))
So that’s what date paste is perfect for:
Creamy, sweet (but not tooth-aching!) and 100% natural, this stuff is too good to miss. You guys, stop reading, go to the store and get yourself some dates. Soak them, add water, puree, and… BOOM magic, date paste is born. Isn’t it fantastic?
Plus you can add it to lots of foods that you’d usually sweeten with sugar: yogurt, oatmeal, glazes, pancakes, waffles… the possibilities are endless! I made some salted caramel sauce with the paste today. Needless to say it was amazing! You know that I’m a huge fan of this 3 Ingredient 6 Minutes Salted Caramel sauce, but hey, I’m not one to pass a refined sugar-free, vegan one which also tastes great!
