Savory Cornmeal Waffles with Poached Egg, Salmon and Asparagus

If I could eat just brunch foods for every meal of the day, I’d die a happy girl.

 

Buttermilk pancakes, chocolate waffles, bread pudding, crêpes… what’s not to love? These foods actually make me want to jump out of the bed first thing in the morning! Though I must confess that I’m more of a savory brunch lover. Give me any kind of breakfast sandwich and you’ll have me doing a happy dance around you, like, I love breakfast sammies so much that it’s not even funny I tell you.


Neither is my awkward happy dance, but I’ll dance anyway.

 

 

Let me tell you about these waffles now: not only do they make me want to dance around in a way that, believe me, you don’t want to see; but they also me want to jump and backflip to the sun because oh wow they’re so darn good!

(For the record, you can tell when I think that a recipe is one of the most awesome things ever because I start typing as if I didn’t know what grammar is. Ooops, I’m sorry, proper punctuation!).

These waffles are worth writing like a three-year-old, though. Ok,  I might look like a 17 year old (even older, people say!); but truth to be told, I’m just a 5′ 9” three year old which forces her mum to buy her Peppa Pig lollipops but won’t eat them because Peppa’s so cute. And my grammar looks like a baby’s when I get too excited about food, we’ll have to learn to live with it!

 

 

I haven’t stopped topping every item of food I come across with a poached eggs since I learned to cook them. Oh gosh, they’re so addictive and the runny yolk makes about everything in the world 32437 times tastier. Plus they make dishes look pretty and quite professional (or at least they do to mum, which won’t ever learn to poach an egg properly!).

Poached eggs rock my world.

Now let’s talk about the actual waffles… I got the recipe from Ashley’s blog, so you know they have to be awesome. And they surely are! If you like golden, crispy waffles, these are for you. And if you don’t, I’m sure the egg yolk will make up for it, right?

 

 

To sum up, make these for your mum’s birthday brunch. She’ll love you and buy you a new Christmas tree and the most adorable decorations you’ll ever see. Aaaahhhhh excited three-year-old me is in sight, we’re putting our tree up this weekend!!!!!!!!!

Now it would be awesome if I could put my Peppa Pig Lollipop on top of the tree instead of the star… yeah.

 

Savory Cornmeal Waffles with Poached Egg, Salmon and Asparagus

Ingredients

  • 1 Egg per person
  • 2 Slices of smoked salmon per person
  • 6-7 Asparagus per person
  • extra virgin olive oil (for the pan)
  • salt & black pepper (to taste)

for the waffles

  • 1 + 3/4 Cups flour
  • 1/2 cup yellow cornmeal
  • 1 Tbsp. salt
  • 25 Grams fresh yeast (or 1 sachet dry yeast)
  • 1/2 Tsp. salt
  • 1 + 3/4 Cups buttermilk
  • 1/4 cup melted butter (olive oil works well too!)
  • 2 Large eggs

Directions

1.
Mix dry ingredients and whisk unitl combined. Stir wet ingredients and whisk until fully mixed. Cover the batter with plastic wrap and refrigerate overnight.
2.
Preheat waffle iron and grease it very well so your waffles don't stick. Cook waffles according to manufacturer's instructions
3.
Poach your egg or cook it to your liking.
4.
Heat some olive oil in a pan and when it's hot add asparagus and sautee on high for 2-3 minutes. Add salt to taste.
5.
Top waffles with salmon, asparagus and the poached egg and enjoy while warm!

Note

You can top the waffles with a fried or sof-boiled egg as well.

    I’m obsessed with waffles! But you probably knew that already! There’s a resto in NYC that made my absolute favourite cornmeal waffles and I think about them daily. But you just topped them with a sammy! Love love love!

    I’m with you, Consuelo. Brunch foods always feel so luxurious and rich. I adore waffles (but no waffle maker at home) and anything with a poached or fried egg on top. Your mom is so lucky…you deserve all the Christmas decorations you want!

    Savory waffles- you’re so smart! The colors of these waffles are so vibrant I thought they had cheddar cheese in them…which then made me think what a good idea that would be :)
