Ground Pork Cannelloni

I hope you all had such a lovely Christmas day! Did you receive nice presents? Ate a yummy breakfast, maybe? I really hope you had the most wonderful time with your loved-ones!

I myself can’t complain, as my parents finally got me an ExpoDisc (!!!). If you read often, you know that I tend to be the most whiny person when it comes to fixing the white balance in my pics. It’s going to be the death of me, I tell you. Well, not anymore, thanks to this great present! 

 


 

And that’s all guys. We Spanish people get most of our presents on the 6th, instead of on Christmas day. But mum and dad thought they’d be kind enough to give us part of them yesterday. And so was I! Over the last three days, I think I’ve spent like 12-13 hours in the kitchen, baking stuff for my family and friends. Mum and I wrapped a selection of all those sweets in pretty (dotty) paper and sent it to our dearest friends. It was a ton of work, but the bags came out so gorgeous that it was definitely worth it! I wanted to take some pictures of them, but it’s been so rainy and gloomy here that it was impossible. 

The bags included:

Salted Chocolate Praline Covered Almonds – Seriously addictive. You can’t stop at one!

Hazelnut Shortbread – I dipped these in chocolate and covered with LOADS of sprinkles and they were the most beautiful thing!

Snowball Cookies – My favorite cookies ever!

Strawberry Almond Thumbprints – So pretty and yummy!

White Chocolate Hazelnut and Cranberry Bark – Best. Bark. Ever.

 

You guys should try everything on that list. All those sweets are beyond amazing!

 

 

Are you tired of sweets and candy yet? I myself can always make room for a couple of cookies more (and yeah, by “a couple” I mean “a dozen”), but I must admit I’ve been craving a lot of savory comfort food lately. Cheesy comfort food, to be exact.

C’mon guys, it’s too soon to be back to the salad now! You should definitely make these cannelloni for dinner this time.

 

 

Yes, I know I don’t look like a healthy food blogger right now. Though I’ve got real big healthy plans coming up for the New Year. Every Monday, I’ll post a makeover of something typically unhealthy made skinny. How awesome does that sound? I can’t wait to share my ideas with you all! Up until the date, I’ve skinnified some classics, such as Spaghetti and Meatballs, Mac & Cheese, Nutella, Cinnamon Rolls and Shepherds Pie among others… and they were all so good that you wouldn’t tell they were healthier than usual!

But as for the moment, let’s all have these cannelloni. Carby goodness filled with a ground pork-tomato mixture and covered in creamy bechamel sauce. All of it covered by gooey cheese… so heavenly.

 

Ground Pork Cannelloni
Serves 6
Cannelloni filled with ground pork and covered in bechamel and cheese. Perfect comfort food!

Ingredients
  1. 12 precooked lasagna noodles
For the meat sauce
  1. 450 grams ground pork tenderloin
  2. 300 grams tomato sauce
  3. 1 small onion
  4. 2 cloves garlic
  5. 1 teaspoon herbes de provence
  6. 1 tablespoon extra virgin olive oil
  7. salt and pepper to taste
For the bechamel
  1. 50 grams flour
  2. 50 grams light butter (I used homemade)
  3. 750 grams skim milk
  4. salt, pepper and nutmeg to taste
For the topping
  1. 80 grams mozzarella cheese
  2. 50 grams parmesan
Instructions
  1. Soak lasagna sheets in hot water for 20 minutes (or as accorded by package).
  2. Heat 1 tbsp. olive oil in a pan, and when it's hot, add julienned onion and minced garlic and sautee until fragant. Add ground meat and sautee until it's no longer pink.
  3. Add tomato sauce and spices and simmer for 15 minutes while you make the bechamel.
  4. For the bechamel, melt butter in a saucepan.
  5. Remove pan from heat and add flour. Whisk vigorously so there's no lumps.
  6. Bring pan back to heat and add milk slowly, whisking constantly to prevent lumps.
  7. Add salt, nutmeg and pepper.
  8. Bring sauce to a boil and simmer for 5-7 minutes until it thickens.
  9. Fill lasagna sheets with the ground pork mixture and roll them.
  10. Cover the bottom of your baking dish with a layer of bechamel and layer cannelloni on top.
  11. Cover them with leftover bechamel.
  12. Top them with cheese.
  13. Bake at 200ºC for 10-15 or until topping is bubbly and golden.
  14. Enjoy warm!
Notes
  1. I used ground pork tenderloin since it's lower in fat, but you can use whichever meat you fancy. Chicken and turkey would work well too.

These would make a perfect special dinner. Not a quick one, I must say.

But one that is so so worth it.

    What a great gift from your parents! I always feel like I have white balance issues, too. It’s so hard to get it just right. Everything you baked and sent as gifts sounds amazing…I pinned your shortbread recipe, too! This meal looks like the perfect comfort food.     That gooey cheese is seriously making my mouth water! This looks amazing!! I’ve never heard of an expodisc…gotta check that out. My Christmas was lovely and it went my fast, as always. Now it’s pretty much back to routine of work and eating better (hopefully).
