Hello guys I’m alive! I haven’t been around for long (read: 4 days) (read#2: 4 days is a long time when it comes to blogging and looking at chocolate brownie pictures online duh I had missed, k?)

Thing is, I had lots of things to celebrate and lots of uni stuff to do. And lots of Game of Thrones chapters to re-watch, but that’s another story for another day.

I PASSED MY ENGLISH CPE (C2) EXAM!!!!!!!!!!!!!!!!!

I still cannot believe that I have actually passed, like what? Seriously? Is this real life or am I still dreaming???? I don’t know but I really want to thank each one of you reading this blog.

Thank you all for your endless support and sweet comments! You’re the reason I keep on writing this blog (which is my favorite thing ever hey!), and at the same time, that’s the reason why my English writing skills aren’t that pitiful, THANKS!

Another big big thank you goes to my fellow blogger friends who write such charming posts that I absolutely enjoy reading. It’s because of you that I almost got a 100/100 on that one *blushes*. Seriously THANK YOU!

Aaaaaaand I can’t forget to thank the sweet Alyssa at My Sequined Life who agreed to chat with me for hooooouuuuurs and helped me improve my speaking. Girrrrrrl, I owe you so much!

Special thanks go to Jon Snow, whose magical voice has made me want to watch all of GoT chapters a million times…. not because I am deeply in love with the man, you know. I was studying, ok? Isn’t listening to Jon Snow’s sexy accent the way normal people study  and pass their listening tests anyway???

Not only did I have to celebrate such an occasion; it was my 18th birthday too and, oh well, that called for wine. Lots of it. Yay for sangria. Not so yay the morning after but I guess that that’s what detox salad are meant for. Plus I got admitted into the uni I wanted to study the grade I love (!!!) >>>>>>>> translation for “drink all the wine again”.

After all that yummy food (may I mention that my week also involved a trip to Valencia to do uni stuff which resulted in me bankrupting an “all that you can eat ice-cream buffet”?), all that I want is eat alllllll the green things.

This salad is such a perfect one to detox after a day (read: a week) full of (delicious) excesses. It’s fresh, it’s light and filling and it’s delicious to boot. You can either eat an impossibly big bowl of the stuff (it happened) or pair it with your protein of choice (um hi fro-yo is considered protein, right??). Any way or another, you’ll have a fantastic summer lunch! 

Green Monster Detox Salad
Serves 2
Refreshing, light and delicious - this is the perfect salad to debloat after too much indulgences!

Ingredients
  1. 1/4 of a cabbage
  2. 1/4 head of broccolli
  3. 1/8 cup pistachios
  4. 1/4 cup chopped celery
  5. 2 large cucumbers
  6. 1/2 avocado
  7. juice from 1 lemon
  8. 1 tbsp. extra virgin olive oil
  9. salt and pepper to taste
Instructions
  1. Mash the avocado with the lemon juice and olive oil. Add salt and pepper to taste.
  2. Make cucumber noodles with a veggie peeler or spiralizer.
  3. Chop the rest of ingredients and toss them in a bowl with the avocado dressing.
Notes
  1. Lime juice may be used instead.
  2. Quantities are orientative.
  3. This recipe is gluten free, paleo and raw vegan.

    Congratulations on your results! You must feel so proud of yourself – a perfect excuse to drink ALL the sangria and eat ALL the ice cream!
    Your salad looks fabulous too – I’m starting my first job on Monday, so have been hunting for the perfect salad to bring with me. I’ll definitely be trying this one, thank you!

    I`m pinning this salad right now! I feel you girl! I always indulge over weekends, and when I get home, I just wanna eat veggies and fruit. I don`t know what it is, but eating veggies on its own makes me feel clean, healthy and kind of superior haha :)
