Did you know that I’m supposed to become an adult in just 6 days? Shocker, I know. You all probably thought that I was a sprinkle-obsessed three-year-old who just happened to be a bit taller for her age.
I’m now wondering whether I’ll magically get more mature the moment I cross the 18-year mark. As far as it goes, I’m quite comfortable with doing lots of grown-up things now, be it planning a trip to London to see Rise Against in November or drinking all the sangria… see? I’m not that much of a three-year-old, duh.
By the way, I hope that mum gets the memo and decides to buy the tickets for me. I mean, she eventually got me a mini donut pan after I asked for it 348934487 times on here #win #mymumiscoolerthanyours. Besides that, my grown-up skills aren’t that developed yet, so 300€ is the cheapest tickets I’ve found… how do you people do it?? My theory is that there must be some kind of magic fairy (like in the sleeping beauty film, you get me) which makes you 8789789 times more intelligent the moment you turn 18 and you’re magically able to do all those things that grown-ups do, such as frying all the stuff without fearing for your life, washing the dishes properly, driving without running ove your dad’s crops (been there, done that – don’t tell anybody though) or saving up your money instead of buying yet another pair of glittery shoes that you probably don’t need.
Not that my grown-up mum has succeded in the last one though.
Aaaaaanyway. I think I will always be a kid at heart. No one will stop me from wanting to eat all the sprinkles or eating all the mini-food. Bonus points if said food is super colorful and fun! Rainbow anything?? Oh yes, give it to me – that’s the way we 3-year-old roll!
This is the part where this grilled chicken quinoa salad comes to action (see? this post has something to do with the salad… it’s just that… I get sooo carried away). Kids will love it because it’s like having a nice, big rainbow in your plate (and which kid hasn’t ever dreamt of eating a darn rainbow????). Aaaand, adults alike will adore it too since it has lots of good-for-you stuff such as quinoa, avocado, veggies and greek yogurt and it’s also super quick to put together so you have more time to do all those grown-up things you guys like to do.
Plus, bacon is involved. ’nuff said.
One salad to rule them all, that’s what we have here.

Whateverrrr. This salad is a glorious one, if I may say so myself. The flavor and texture combos are amazing and it has lots of healthy stuff you should feel great about eating! Aaaand, unlike lots of salads I’ve tried, it will leave you full enough so you don’t feel like eating your dog one hour after you’ve eaten it.
No, why would you look at me like that? I’ve never tried to eat Peter.…… ask him if you must. It’s not as if he could talk anyway hehehe.
- 90 grams dry quinoa
- 180 grams water
- 40 grams centercut bacon (or ham)
- 120 grams chicken breast, grilled
- 1 tomato
- 1 peach
- 1/2 cucumber
- 1/2 red bell pepper
- 1/2 red onion
- 125 grams mixed greend
- 50 grams corn kernels
- 1/2 avocado
- 100 grams greek yogurt
- juice from one lime
- 1 tbsp. olive oil
- a dash of garlic powder
- salt & pepper to taste
- Grill, pan-fry or bake chicken & bacon to your liking.
- Chop all the salad ingredients and toss them into a bowl.
- For the dressing, blend all of the ingredients together until smooth.
- Combine both and enjoy!
- Make sure that the avocado you're using is ripe enough so your dressing doesn't turn out chunky!
- To make this vegan, leave out chicken and bacon and use 1/2 avocado more instead of the yogurt.
- This salad is naturally gluten free.
