I think we’ve all discussed my rather obsessive personality, and we’ve talked about my love for these heavenly cauliflower nuggets.

You guys do the math and you’ll see that the next thing to happen would be another post involving those cauliflower nuggets, now in pattie form… You know, because I didn’t want to be that obsessive. So burgers it is this time!

Next time someone tells you how boring vegetarian food is, just throw one of these monsters at their faces. Some serious damage will happen, that’s for sure. We’re talking about one deadly big burger (like really HUGE) with layers and layers of awesomeness. Should it hit you, it will blow your mind off – literally.

Cheesy cauliflower patties? Check!

Extra cheesy zucchini fritters? Double check!

Crispy spiced beet chips? Yes please!

Roasted vegetables? Absolutely!

Extra cheese? Um, do we need to raise that very question? You bet that some extra gouda is going into these babies.

Babies in a figurative sense, I mean. These are the size of a small country.

And when you thought that life just couldn’t get any more better, all that goodness gets sandwiched between a super fluffy bread bun <<< that’s the moment you’ll want to give up your job and lead a live devoted to monster burger eating.

Not that I’ve been thinking about it.

 Truth to be told, I have. Like, in a “let’s start a new cauliflower zucchini fritter and beet chips monster burgers appreciation club” kind of way. We all could meet for tea while we eat our burgers and read books about these burgers singing ol’ country songs about them.

Aaaaaaaand, we may or may not watch some Game of Thrones while we are at it. You know, hot men with beards, swords and veggie burgers? That’s the kind of plan which makes me dance with joy.

Cauliflower, Zucchini Fritters and Beet Chips Monster Burgers
Yields 6
Layers and layers of deliciousness in a healthy burger the size of a small country. AAAAHMAZING.

Cauliflower patties
  1. 1 kg head of cauliflower
  2. 1 egg
  3. 1/3 cup seasoned breadcrumbs
  4. 1 + 1/2 tsp. garlic powder
  5. 1 tsp. salt
  6. 50 grams aged cheddar, grated
  7. 50 grams shredded mozzarella
  8. extra breadcrumbs to roll the patties in
Zucchini fritters
  1. 2 small zucchinis (750gr)
  2. 2 eggs
  3. 120 grams (1 cup) white whole wheat flour
  4. 45 grams (1/2 cup) rolled oats
  5. 1 + 1/2 tsp. salt
  6. 1 + 1/2 tsp. garlic powder
  7. 200 grams shredded mozzarella
Roasted vegetables
  1. 2 tomatoes
  2. 1 red pepper
  3. 1 onion
  4. salt, pepper and extra virgin olive oil
  5. A drizzle of dark sesame tahini.
  6. Beet chips
  7. 6 slices of gouda
  8. 6 burger buns
Cauliflower patties
  1. Steam the cauliflower until it can be mashed with a fork.
  2. Drain all the excess water.
  3. Mix cauliflower with the egg, cheese, breadcrumbs and seasonings and form dough into 6 patties.
  4. Fry in a drizzle of olive oil until crispy and golden.
Zucchini fritters
  1. Grate the zucchini and mix it with the egg, cheese, seasonings and flours.
  2. If mixture is too wet, add extra flour (this depends on the kind of zucchini you get and the size of the eggs you're using!). If it's too dry, a bit of extra cheese.
  3. Form into about 12 patties.
  4. Fry in a drizzle of oilve oil until golden.
Roasted vegetables
  1. Drizzle vegetables with salt, pepper and evoo and roast until slighty charred.
Beet chips
  1. Follow Jessica's instructions, please!
To layer
  1. Place some veggies, one cauliflower pattie, two zucchini fritters, some tahini and a slice of gouda in your bread bun.
  2. Place in the warm oven until gouda is melted and bread is golden.
  3. Enjoy!

    Absolutely wonderful, Consuelo! I just love this ‘new wave’ of veggie burgers that aren’t just mushy frozen veggies squashed into a patty … yuck! I bet these components would be great eaten by themselves with a salad, too. :-)

    Oh I miss danish butter cookies! I am hungry now… as much as I miss danish cookies I would opt for these burgers now (If I had to pick one thing). Perfect lunch (and dinner, and breakfast…ah, and snack too). Extra yumminess without meat… I can’t wish for more.
