I have this problem where I have lots of ideas for Valentine’s day desserts but no boyfriend to share them with.

Unless we’re counting Jon Snow as a boyfriend, but honestly, I’m much more devoted to this relationship than he is.

Looks like this ship isn’t going anywhere.

Because apparently it’s still illegal to kidnap a grown-up man and force it to spend the day with you watching cheesy films (love actually on loop) and eating chocolates… no matter how many  heart-shaped pink baked goodies you give them in exchange.

Not that I checked on google or something.

You guys promise me you’ll never tell him about this blog when we get married. I really don’t want to come out as a creep, you know.

Anyway, seeing that if getting a boyfriend was a subject in university I’d be getting all C’s, I think I’ll be trying to excel at a different subject now.

Maths? Nah, that’s boring.

Geology? TAKE YOUR ROCKS ANYWHERE ELSE BECAUSE THERE’S NO WAY I WANT TO EXCEL AT THAT.

Winged eyeliner? Nope, still failing that one… on the bright side, if looking like a racoon 24/7 was a subject I’d be getting all straight A’s.

Doing laundry when it’s due before I end up buying myself a new pack of undies? I think that if one was actually a subject I’d get the lowest mark…

Doing my bloggy-work and posting a recipe for pink cake on time for Valentine’s day? YEP! That’s a subject I can keep on with!

I actually did my health-food blogger homework this time and got to make a naturally dyed, healthy cake which tastes reeeaaaaally nice and doesn’t taste “”””healthy”””” in the slightest.

Now, where’s my honors degree?????

Better yet, I got to make it pink without using beets.

Have I already told you about my feeling towards beets? I love the whole beet concept: they’re gorgeous (that bright pink colour is just so cool!), they’re super healthy and hip but I JUST CANNOT GET OVER THE FACT THAT THEY TASTE LIKE WORN SOCKS.

Sorry not sorry. I guess I’ll have to have some points removed off my health blogger card… which is already quite low after last week (celebrating the end of final season parties much?)… yep.

Let’s get back to beets. I really REALLY want to like them, but I just cannot bring myself to it. No matter how hard I try, their taste will always remind me of the pile of socks which have been sitting on my laundry basket for a month now…

And it’s not as if I haven’t tried, I tell you. Lately, I’ve been making myself eat some crispy beetroot chips in a poor attempt to like them. And guess what? They actually taste like food! But then again there’s the fact that they frickin’ make your pee red which makes me hate beets with a burning passion again.

Like, you know, I’d rather not think I’m going to die every time I use the toilet, thank you very much.

Enough talking about them, let’s get back to my favourite topic ever: cake.

This one is pretty enough for Valentine’s day, and so delicious that you’ll want to have it everyday! Super moist (oddly enough, that’s not a word I dislike… I mean, there are much worse things to hate, for example beets and burpees, among others), fluffy and absolutely irresistible. I couldn’t stop myself from reaching for another slice over and over!

Sweet enough for dessert, but healthy enough to make an appereance at your breakfast table. Cake for breakfast? Yes please!

Pink cake for breakfast? YES JUST YES!

I made this one healthier thanks to greek yogurt, olive oil and this superfood cranberry powder that the folks over at Finnberry were kind enough to send me.

Let me tell you that these powders are the bomb. Not only are they packed with antioxidants and vitamins, they also make your food super duper pretty, Jon Snow kind of pretty. How cool is that?

Ingredients
  1. 310 grams unbleached white flour
  2. 180gr. sugar
  3. 15 gr. baking powder
  4. 2 large eggs
  5. 150 ml. low fat buttermilk
  6. 75 gr. oil
  7. 260 grams 2% greek yogurt
  8. 1 tbsp. vanilla extract
  9. 3 tbsp. cranberry powder
Instructions
  1. Whisk flour, sugar and baking powder in a bowl until combined.
  2. Add eggs, oli, greek yogurt, buttermilk and vanilla extract and mix until smooth.
  3. Divide batter in two bowls.
  4. Add 3 tbsp. of cranberry powder to one half of the batter and stir to combine. You might want to add a couple of tablespoons of sugars more if you don't like the tartness of the cranberries!
  5. Drop spoonfuls of the vanilla batter in a small loaf pan. Next add spoonfuls of the pink batter and DO NOT STIR THEM. Drop more of the vanilla batter and then more of the pink batter. DO NOT SWIRL THEM. The marbled pattern will create itself!
  6. Bake at 200ΒΊC for 35-40 minutes or until you insert a toothpick in the center and it comes out clean.
  7. Let it cool before cutting! Enjoy!
Notes
  1. If you use a larger baking pan your loaf will not rise as much!
  2. Top it with greek yogurt, coconut whipped cream or fresh berries for an extra delicious dessert.

    Oh my WORD THANK YOU. Beets taste like CRAP for baking. Nothing makes my heart sink more than seeing “Healthy Red Velvet!!” emblazoned across a post only to find the main ingredient is a whole freaking bowl of mashed nasty.

    I’m probably the pickiest person ever when it comes to red velvet so I’m sure that doesn’t help πŸ˜‰

    If there’s ever a day to have cake for breakfast, it would be Valentine’s Day. : ) I loved learning about cranberry powder…there are so many things to discover! I hope you had a nice V-day and treated yourself well with some delicious food and treats. The table spread looks wonderful.

    Seriously, boyfriends are overrated. This cake on the other hand, holy cannoli, this needs to be illegal it looks so darn good! That pink swirl is gorgeous and the texture is making me drool just looking at it. Wishing I had this for breakfast! Pinned!

    This is gorgeous and I love the flavors. And let me tell you, even as someone who loves loves LOVES beets: I totally understand why they’re not everyone’s thing. The socks thing made me LOL for real.
