Hi my name is Consuelo and my talents include: crying over the death of fictional characters, counting the days until I get to go to another concert and coming up with recipes for protein brownies when I really really should be doing laundry instead. Or cleaning. Or biochem revision. Or anything else but writing ingredients on a paper and throwing yummy stuff into a food processor. You folks get the idea.

The very least I could do was turn said brownies into a superfood snack so I… uh… get to have brownies for lunch? We totally can count that as a 4th talent I guess?

See. This is the kind of procrastination I like. At the end of the day, my homework might not be done yet, but I’ve got a tray full of brownies waiting for me and… that’s all that matters, right?

So much better than the kind where you decide to engage in a “let’s-watch-the-entire-season-3-of-game-of-thrones-for-the-thirteenth-time” procrastivity (is that even a word?) and your roommate finds you laying on the floor sobbing inconsolably because ALL THE FEELINGS I JUST I JUST CAN’T ANYMORE nine hours after…

At least I get brownies this way. And a heart which isn’t broken.

But let’s get back to brownies because I’m guessing that’s why you’re all here for… or is any of you here for all the whining, obsessive GoT comments and complaining?

The good thing about these brownies is that, not only are they as tasty as their chocolaty nature implies, but also super-duper-mega healthy (hello superfoods, healthy fats, protein and fiber!!) and easy to make! Just one blender and you’re good to go. If that isn’t the epithome of fabulous then I don’t know what is!

These are made using my favourite Creative Nature Superfoods raw cacao powder and shelled hemp seeds for an extra nutritious boost. But will you notice how healthy they are? Nope. Will you want to devour the whole tray in a sitting? Most likely. Will you cry once you’ve eaten them all? Definitely.

But you know how the saying goes: don’t cry because it’s over, smile because it happened.

In other words, make the brownies, eat them all, and try not to sob too much when they’re gone… they were so good that they will live in your memory forever and always.

Serves 12
Healthy, easy to make and delicious. Could you ask for more?

Ingredients
  1. 150 grams medjool dates, pitted
  2. 50 grams dried prunes
  3. 40 grams raw cacao powder
  4. 50 grams shelled hemp seeds
  5. 150 grams walnuts
  6. 180 grams coconut sugar
  7. seeds from 1 vanilla bean, optional
Instructions
  1. Start by blending the dates until a paste forms.
  2. Add in walnuts and process.
  3. Add in coconut sugar, raw cacao and vanilla seeds and pulse again to combine.
  4. Add shelled hemp seeds and pulse once more to form a ball.
  5. Grease a tray and press dough ball into it, shaping it into a rectangle.
  6. Chill in the fridge for at least 4-5 hours before you eat them.
Notes
  1. You can use any nut you want. Hazelnuts, almonds, pecans... all work well!

    You are my hero for this recipe! I just recently started making changes to my diet to incorporate healthier foods. Stuff like this makes that transition so much easier! Definitely going to make these!
