Brownie Batter Overnight Oats

So I wanted to write a witty post on why these brownie batter overnight oats are pretty much the best thing you’ll ever put into your mouth.

Then I realized that it’s like 42039ºC outside and pretty much all my neurons are fried. Or poached. Fancy neurons I have, huh?

Anyway, I’ve pretty much spent the past two hours sitting in front of a laptop struggling to find the words to make you stop whatever you’re doing right now and get up to make some oatmeal magic. Because, I’m telling you, these oats are going to change your world.

They’re worth pausing that OITNB chapter you’re watching right now.

They’re worth that extra trip to the supermarket when you’ve run out of oats.

Okay maybe I crossed the line with the OITNB thing. Little things are better than a OITNB chapter… but I promise it’s just 5 minutes making your oats and then you’re back to your sofa.

That’s it. 300 seconds of your time and a couple of ingredients and you’ll be in your way to chocolate heaven! And the best part is that, sinful as they may look, these oats are completely healthy and breakfast approved. Packed with nutrition and absolutely filling thanks to those chia seeds, these will hold you through the most hectic of mornings.

No mid-morning sugar crashes. No turning into a hangry beast. No more wanting to eat your colleagues/classmates/family the moment they mention that food you aren’t eating.

Say hello to your new breakfast savior! Tasty? You bet! (I mean brownie batter, hellooooo) Healthy? YES! (Gotta love the oat + chia + raw cacao + cashew butter combo) Filling? Yup. Most satisfying breakfast you’ll have in a while. Easy to make? YASSSS. Bring on all that extra time to sleep in the morning, since they’re made the night before. Cold enough not to make you faint when it’s well over 40ºC outside? Yes pleeeease.

Brownie Batter Overnight Oatmeal
Serves 1
A breakfast so good it tastes like dessert!

Ingredients
  1. 35 grams rolled oats
  2. 2 tablespoons chia seeds
  3. 1 teaspoon vanilla extract
  4. 1 tablespoon cashew butter
  5. 1-2 tablespoons coconut sugar
  6. 100 grams chocolate soya yogurt
  7. 150 mililiters almond milk
Instructions
  1. Whisk together oats, sugar and chia seeds in a jar.
  2. Add in cashew butter, vanilla, yogurt and stir until combined.
  3. Add in milk and stir again until combined.
  4. Let mixture thicken in the fridge overnight.
  5. Enjoy these cold in the morning, topped with fruit, chocolate, extra nut-butter, etc...
Notes
  1. Almond butter or nutella can be used in place of cashew butter. Technically all nut butters work, but those are the only ones which make this taste lik brownie batter.
  2. I used Alpro soya chocolate yogurts. Any brand will do.
  3. Any kind of milk works well here.
  4. This recipe is vegan and gluten free if you use gluten free certified oats.

    Hehe, OITNB shout out again lol! And I definitely think summer is frying my neurons too. So much for relaxing and recharging. It must be all the humidity. Humidity definitely does not equal relaxing. But overnight oats does equal a bit of relaxing. I love waking up and my breakfast is already kicking it in the fridge waiting for me. And that it’s a real breakfast that is going to fill me up and start my day off right. Plus, you clearly are game for chocolate in the a.m. which pretty much makes us BFF’s, I’ve decided to move from almost to full blow status. Haha. 😉

    Oh my gosh this looks amazing! :) Just wondering whether there are any alternatives to the chocolate soya yogurt? I can’t seem to find it around where I live. Maybe normal yogurt with some cocoa powder? Thanks! :)

      Thanks a lot! Yes, you can use any yogurt you’d like. Make sure that you’re adding extra sweetener if you mix plain yogurt + chocolate though :) x
