Finally blogging again! Sorry for being absent for so long. If you guys follow me on Instagram you’ll know that I have moved to my new student flat recently and we didn’t have our wifi set up until two days ago. Yes, that was like 24 days off the Internet. Yes, I almost died. Yes, all I wanted to do was throw the wifi man off a cliff, why you ask? So happy that I’m blogging again now. I’ve so missed you!! Who’s ready for lots of yumminess?
Peach salad. In late September. All light, summery and refreshing. Have I gone crazy????
I haven’t. Unless it’s crazy about the joys of smoky, toasted coconut and hazelnuts we’re talking about. In that case then yes, I’m nuts about them.
Did you miss all those bad jokes (and GoT obsessive rambles) while I was gone? I surely did miss writing them!
Anyway. Quinoa salad. Such a lovely addition to summer barbecues isn’t it? Then why is it that I’m posting about it in autumn when you well know that I’m the biggest fan of cooler weather and all things wonderfully cosy so it’s my duty to post about apples and spice and all things nice?
Blame the wifi man. And slap him too if you have the chance. Long story short, my flatmates and I contacted him almost a month ago to set up our wifi because hmmm well we have univeristy duties and jobs and things like that where internet is needed. Wifi man seemed to love procrastinating as much as yours truly does, so he spent 24 days doing all sort of things but installing our wifi.
And you know how much I love my wifi, don’t you? Isn’t re-watching the same GoT chapter over and over again a necessity???? How about lusting over Topshop shoes? And blogging about them peaches while they’re still on season???
So much posts to write, shoes to order (I wish haha #brokenunistudentlyf) and Jon Snow scenes to drool over. Wifi man, give me my 24 days back!! On the bright side, I had so much time to actually become a social human being and clean my room so it’s all good.
Now, let me tell you about this salad so you can use up the very last of those juicy summer peaches while you still can. First of all, toasted coconut. How good is it??? Add some fragant toasted hazelnuts and peach bits to the mixture and you’ve got yourself a ticket to good salad heaven.
Then we have some quinoa for protein and filling points (because those salad leaves only salad leave me feeling emptier than the end of a Game of Thrones season, let’s be honest) and some juicy grapes (or blueberries if you can’t get the later) and your ticket to good salad heaven becomes a VIP entry one.
And that lemon mint dressing??
So, so, so good.
I strongly recommend to use it in all kind of salads. It adds a sweet and salty touch to them and makes them extra interesting! Boring salads? Never again!!
Now, make the salad before those peaches are gone and we’re forced to endure this period of fruits I don’t care much about. Autumn, I love you dearly, but it’d be nice to have a couple of watermelons and raspberries to snack on. There’s only so many apples a girl can put into her dessert, you know 😉
- 3 cups of mixed greens
- 1 cup of cooked quinoa
- 1/4 cup coconut flakes
- 2 small peaches
- 1/8 cup of hazelnuts
- 1 tbsp. coconut oil
- 1/2 cup concord grapes
- 1/4 cup extra virgin olive oil
- juice from 1 lemon
- a handful of fresh mint
- salt and pepper to taste
- Start by heating some coconut oil in a pan. When it's warm, add the coconut, chopped hazelnuts and diced peach.
- Sautee for 3-4 minutes until golden and fragant.
- To make the dressing combine together oil, lemon juice, chopped mint and salt and pepper.
- Mix together mixed greens, grapes, toasted coconut, hazelnuts and peaches, quinoa and stir in the dressing.
- This makes extra dressing and it can be kept in the fridge for up to 5-6 days.
