Who here is a fan of those double chocolate muffins Starbucks makes?
If we’re going to be honest with each other, then I’ll have to tell you that I’ve never ever had one. So weird, right? Not so much if you take into account that I grew up in a rather small town with no fancy coffee places in sight and was never a fan of spending that much money in things that would be gone in seconds anyway.
Fluffy, fudgy muffins with melty pockets of chocolaty perfection? Sign me up!!
Having to pay that much money for something that will be demolished in mere seconds giving my monster-like, muffin-devouring nature? No thanks!!
That’s not to say that Starbucks goodies don’t taste nice (oh boy, they do!), but I prefer to know what’s going in my muffins. Lots of love, happy points & cruelty free ingredients? And these are made with unprocessed sugar and oils? Yes please! I’d be able to demolish seven of them in a sitting.
Actually been there, done that. Vini vidi vinci more like vini vide all the muffins and ate them all. I’d so make a cool roman. You know, the one who took naps and ate grapes all day. That is the life.
Going back to muffins, oh glorious muffins (and it’s not that I don’t like Roman stuff. I do. Especially those gladiators in the Pompeii film wink wink), you pals need to bake a batch of these. Do you like fluffy baked goods? Melty chocolate bites? Cute muffin wrappers????
Then these muffins are for you.
And if you answered no, then you need to tell me where I have to sign up so as to be your friend. Think of how awesome that would actually be. Everytime we hung up I get to eat your share of chocolate muffins as well as mine. Brilliant idea much? I am the future.
Jokes aside… these muffins are good. So, so, so, so, so good. My family couldn’t believe that these were actually healthy. Too bad I also thought they were amazing and proceeded to eat them all by myself. Perks of being the muffinmaker, yo!
My advice would be that you make an extra batch so you have one to eat by yourself and one to share with your family and friends. Or two to yourself. Whatever path you take, I won’t tell.
- 200 grams spelt flour
- 40 grams almond flour
- 40 grams cacao powder
- 15 grams baking powder
- 210 grams coconut sugar
- 80 grams coconut oil
- 200 grams almond milk
- 1 tbsp. white wine vinegar
- 1 tbsp. vanilla extract
- 150 grams dark chocolate chips or dark chocolate, chopped
- Whisk together both flours, baking powder, cacao and sugar until combined.
- Add in the melted coconut oil, milk, vanilla and vinegar and stir until combined.
- Add in the chocolate chips and stir.
- Fill in 10 metal muffins tins with the batter.
- Bake at 350F (180ºC) for 20-35 minutes or until muffins look done and you insert a toothpick in the center and it comes out clean. This depends on the oven!
- Brown sugar can be used in place of coconut sugar.
- Any kind of nut milk or oat/rice milk will do.
- Metal muffin tins work best to get taller muffins. If you use paper cups they might overflow and end up looking awful!
