And to think that I used to be a smoothie hater (!!!!!)

People, meet Consuelo, the 19-year-old smoothie junkie who’s writing this post while sipping her very delicious strawberry lime drink. Yep, she’s so wishing it was a blueberry muffin flavoured smoothie instead but what can she do when strawberries are so cheap (1€ per kilo, is this real life or is this just a berry tasty fantasy !!!! ) while blueberries are like a million bucks per tiny box?

Which is by the way the reason while this smoothie looks like one of those Xbox obsessed kids who stay inside 24/7 playing Call of Duty or whatever kids play these days. AKA PALE. Ghostly and stuff. But who am I to judge when I’m like the palest person ever?

Anyway, I simply put 50 grams of blueberries in my smoothie since that was all I had on hand (gotta keep some for toppings because reasons. Very serious reasons aka me being a total topping snob) but feel free to add lots more to get a prettier, blue-er colour.

Then we have some creamy dreamy cashew butter to add that muffin batter like touch and some oats to make this even more filling. Plus, a bit of luscious coconut sugar which never ever hurts.

Unless someone tries to pour it on your eyes, then I guess it does hurt.

But coconut sugar in smoothies? What a glorious concoction sent stright from heaven! It makes everything tastes vanilla-like so it’s automatically a winner in my book.

Blueberry Muffin Smoothie
Serves 1
A delicious and creamy blueberry muffin flavoured smoothie!

Ingredients
  1. 150 grams frozen blueberries
  2. 1 small frozen banana
  3. 1 tbsp. cashew butter
  4. 30 grams rolled oats
  5. 2 tbsp. coconut sugar
  6. 1/2 tbsp. vanilla extract
  7. 200-250 ml. cashew mylk
Instructions
  1. Blend all the ingredients together until smooth.
  2. Feel free to add more mylk if desired.
Notes
  1. I used about 50 grams of blueberries for the one pictured which is why it's so pale but I usually go for more than 100 grams and it turns out so much better!

    Smoothie hater? YOU?? I always thought of you as part of the lineup of queens of fruity smoothie bowls :) this is such an amazing idea and I bet the blueberries will taste so refreshing with the cashew butter and vanilla extract! The oats kind of scare me but I think it will work!
