Easy Peanut Caramel Sauce

Hello everyone! It’s me Consuelo keeping it mega short and sweet today (again)

Because I’m such a procrastinator and I’m having to queue all the posts that should go up during my followers the same night.

Good thing is that, as you read, I’m probably on holiday. Probably because there’s a really really high chance that I’ve missed my flight or something. I would be lying if I said it hasn’t happened ooops.

Ingredients
  1. 250 grams sugar
  2. 120 grams coconut milk
  3. 60 grams coconut oil (or vegan butter)
  4. 1 tsp. cream of tartar
  5. 150 grams creamy peanut butter
Instructions
  1. Okay, this might be called "easy sauce", but you'll still pay with burning sugar so you have to be a bit careful. Fear not, because if I am able to make this, so you are.
  2. Heat the sugar in a saucepan on low-medium until it melts.
  3. Carefully, add in the warm milk, stirring constantly.
  4. Add in cream of tartar and whisk until creamy.
  5. Add in coconut oil and whisk again.
  6. Add in peanut butter and stir once again until creamy.
  7. Sauce will thicken as it cools.
Notes
  1. Cream of tartar is necessary if you want your sauce not to form crystals in the jar.

Yummy, can I just eat it with a spoon? I’m all about anything with peanut butter!

Fellow procrastinator with ya! Still haven’t done all the NYC recaps from March that I promised I’d publish and so many reviews that are totally lost in the making. :( I feel awful!

Dear Consuelo, I want to thank you for making complicated things easy and giving me courage to succeed :) I just made a full jar of this wonderful sauce! It’s a bit too coconut-y, but still delicious. It’s also thinner and lighter than yours, but I think it’s because of coconut milk (not the best one, I suppose). I can’t wait to use it somehow, though I already ate a spoon right from a saucer, oops! Thank you!
