Put your hands up in the air if you too like me think that there’s nothing in the world quite as glorious as rice & beans bowls are.
Nothing. Rien de rien. Nada. ничего. Nichts. Nič. τίποτα. Nekas. Nimic. ไม่มีอะไร. Ei mitään. Ekkert. 沒什麼.
Pheww. That was a fun half an hour I spent with Google translator in order to prove you all how much I love my rice & beans. How to make them even better, you ask?
“But that’s impossible!” – you yell. And you’re very right, but not quite. Because, my friend, rice & beans might be the epitome of perfection but you sure as heck and make them even tastier when you add:
CRISPY SPICY SMOKED TOFU.
This bowl is so hot that if it was a famous actor, it’d totally have an army of horny teenagers dying over it.
That fluffy rice! Those spicy beans! The most incredible tofu you’ve ever tasted! Creamy avocado! A drizzle of garlic sauce! Charred chilli lemon corn!!!! Crisp fresh vegetables! Sauteed peppers! And kale!!!!
((((I know it might seem hard to get all excited for kale but hear me now: you pal haven’t tried this kale))))
Fresh, crisp kale leaves marinated in a spicy tangy lemon chilli olive oil mixture. Holy gucamole – this does make salad taste every bit as good as cake… which might just be a bit of a stretch BUT trust me: this kale is real good.
Also, can we stop a minute and be head over heels with this corn? I mean?? ??? Crispy, spicy, lemon chilli corn. If that doesn’t sound like your idea of heaven then boy!!! There must be something not quite right with you!!!!
This combo, my frieds, is what a bowl of comfort feels like. Perfect for those chilly autumn nights when you need something warm to get all cozy. But also perfect for summer lunches because, let’s be honest – there’s nothing in the world as fabulous as summer produce is. I’m getting all tickly thinking about those ripe tomatoes, crisp cucumbers and all that summer corn!!!! “HOLY MOLY. Summer can’t come quick enough!!!” – I scream from under my blanket.
Kidding on that one though. I appreciate every bit of university induced stress free time, but let’s get real here: I’m SO a winter person. “Warm beverages all day everyday!!!” – I yell while I raise my ginger lemon tea mug on the sky and almost drop it on my laptop. Edgy Topshop coats. Furry socks. All the blankets. Hot porridge in the morning without the risk of dying from heatstroke. CHRISTMAS. Being able to actually run outside without melting. Huge black boots with equally huge platforms (even though I’m like 5′ 11” and I always end up towering over people sigh m8). Scarfs. EVERYTHING. Winter is actually perfect and it would be nice if they could, like, move all the exams to summer and let me enjoy my precious winter time in peace.
However, seeing that’s not going to happen, I’ve decided to make the most of this imperfect winter time and EAT ALL THE BEANS. With crispy tofu. And lots of avocado. And corn, please. All the corn!
And I totally think you pal should do the same.
Spicy Tofu & Pinto Bean Bowls
- 1 + 1/2 cups cooked pinto beans
- 3 tbsp. smoked hot sauce
- 1 tbsp. bbq sauce
- 1/2 tsp. garlic powder
- salt & pepper to taste
- 250 grams smoked tofu
- 3 tbsp. bbq sauce
- 1/2 tsp. extra hot sauce
- salt & pepper to taste
- 1 corn cob
- half a lemon
- 1/2 tbsp. chilli flakes
- 100 grams kale
- half a lemon
- 1/4 tsp. chilli powder
- 1 tbsp. extra virgin olive oil
- cooked brown rice
- chopped cucumber
- sauteed red peppers
- vegan garlic mayo
- fresh cilantro
- Heat some oil in a pan and when it's warm, add the beans and sautee until toasty.
- Add in bbq and hot sauce and stir to combine.
- Keep sauteeing until fragant.
- Cut the tofu into cubes. You shouldn't need to drain it, as smoked tofu is pretty firm.
- Heat some olive oil in a pan and add the tofu when it's hot.
- Sautee until golden and crispy.
- Add bbq and hot sauce and stir to combine.
- Sautee for 5 minutes or until fragant.
- Heat some olive oil in a pan and add the corn when it's warm.
- Drizzle with lemon and chilli and keep cooking until it's nice and charred.
- Cut kale into ribbons.
- Drizzle lemon & olive oil on top.
- Add chilli powder.
- Massage with your fingers until kale is soft.
- Put all of the ingredients in a bowl and drizzle with garlic sauce. Enjoy!
