Vegan Chocolate Drizzled Shortbread

Hello everyone and welcome to another edition of “I really need to study so I’m going to upload one super lame post once again”. Lame in the sense that my writing today is going to suck but, rest assured: these cookies ain’t a bit lame.

Lazy? Sure thing. These aren’t a masterpiece of any kind (like *ahem* this beauty of a layer cake I whipped up a few days ago) but they sure are nice! What’s better than a buttery, crunchy cookie that is also vegan? Oh well, let me answer that question for you!

Lazy butts around the world: let’s dance around the room, hearts filled with joy because these cookies are so frickin’ easy to make it seems like a dream. Ok, maybe not dance, dance. Maybe just nod with satisfaction. We’re lazy people after all.

Honestly though? It’s creepy how these cookies taste so similar to the real deal. You know those fabulous butter cookies which come in metal tins which are usually filled with sewing supplies like 99.9% of the time? They’re glorious. Oh well, oh well – surprisingly enough – these taste just like these!

And don’t get me started on that chocolate drizzle. I wasn’t sure that it’d work with the whole shortbread concept, you know. Because real buttery shortbread is always so pure it doesn’t need anything else to shine… but on the other hand, when is chocolate a bad idea? (Let me answer that question for you again)

a) Chocolate on salad: that sucks. Don’t try it. Not that I have, or something. It just seems like one of these ideas you know you’re going to regret even before you try it. Like cutting your self with a sheet of paper 100 times and then go skinny-dipping in a tub of vinegar. Just don’t try either.

Again: not that I have. I’m not that much of an idiot.

b) When you’ve eaten like 26 chocolate bars and you decide to reach for the 27th one.

Now that I think about it, I might have given that one a go… like a couple of times… and by a couple I mean twelve.

c) Chocolate on shortbread though? What a blissful creation.

Vegan Chocolate Drizzled Shortbread
Serves 18
Your favourite christmas cookie now with a vegan twist!

Ingredients
  1. 110 grams vegan butter
  2. 150 grams flour
  3. 80 grams powdered sugar
  4. 1/8 tsp. baking powder
  5. 100 grams dark chocolate
Instructions
  1. Melt vegan butter.
  2. Add sugar and baking powder and whisk until combined.
  3. Add in flour and stir until combined, trying to form a ball.
  4. Roll the dough into a 1/4 inch (0.6 cm) circle.
  5. Cut into rounds with a cookie cutter.
  6. Bake in a preheated oven at 180ºC (375) for 8-10 minutes.
  7. While they bake, melt chocolate.
  8. Let them cool before drizzling with chocolate. Enjoy!
