Orange Almond Chocolate Chip Cookies

Okay, who’s in the mood for a cookie?

Now, that’s a stupid question? Who isn’t? Who doesn’t like cookies, that’s the question. Like, if all the questions on tomorrow’s thermodynamics test were that easy, I’d probably wouldn’t spend 90% of my time in university inside the room where make up exams are held.

Lol.

But it’s a sad lol. Because make up exams ruin me, I’m telling you.

These cookies though? They do everything but ruin your day. Crispy edges, chewy centers and a lovely hint of orange, almond and vanilla. Doesn’t that sound like absolute heaven to you? Because if it doesn’t… you might want to go for a doctor check-up, because something ain’t clearly right with you, my friend.

(Though I’m pretty sure these cookies could heal you. They’re that good)

ANYWAY – and it’s a sad anyway – I should be doing anything today but rambling about how good these cookies are… be it revision (obviously), laundry (because tmi I was out of normal panties today and had to wear my finest lingery to class today, not that any of you care since you’re probably here for them cookies, but yeah, that’s the harsh life of a lazy college student) or lunch prepping. Why don’t I ever do lunch prepping before exams, that’s the question. Like, it’s something pretty easy to get done BUT for some reason I always end up making nothing at all and having to pack rice cakes and stuff to eat before the exam. And the rest of days I get all fancy-schmancy, eating things like blue cheese gnocchi and stuff BUT NO, on exam day it’s always rice cakes, bread and whatever vegan thing I can find in the vending machine in front of the examination room. Which, as you can guess, makes for a really hungry me taking a hard exam. WHICH brings us back to the make up exam room.

Seriously what is wrong with me?

Also, sorry if you’re wondering what is it with all this rambling. Like??? You’re probably here for the cookies and not much else??? Make the whiny college gal shut up, you say. YIPPIE. I just happen to have had a lot (and I say A LOTTTTT) coffee today.

ANYWAY – and this is a happy anyway, because we’re talking cookies here – let’s get back to the point of this very lame post. Them cookies. I know you want them. I know I want them. Which is sad because I made them loads of time ago and as you can imagine, there are no cookies left, no joy, no hope. ANYTHING.

Just a whole lot of coffee which I still haven’t had the chance to drink.

(Which, by the way, goes so well with cookies. Mmm cookies)

You guys need to give them a go. Like, I don’t know if you’re still here because, to be honest, I’m being such a pain in the arse today. But hey, if you are: thank you for reading! I wish I could send you cookies! But customs policies are the worst so that probably isn’t happening anytime soon SO you’d better make some yourself.

They’re super easy to make. And delish. I promise. Now you make them and try to figure out a way to get through customs and send me a ton. Please and thank you.

Orange Almond Chocolate Chip Cookies

Ingredients

  • 100 grams all purpose flour
  • 50 grams rolled oats
  • 30 grams almond flour
  • 120 grams coconut sugar
  • 1/8 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1 tbsp. vanilla extract
  • 80 grams almond butter
  • 45 grams coconut oil
  • 1 flax egg
  • a pinch of salt
  • zest from one orange
  • 150 grams dark chocolate

Instructions

  1. Preheat oven to 200ºC (400F)
  2. Whisk together oats, flour, almond flour, baking powder, cinnamon, salt and sugar.
  3. In another bowl, whisk together vanilla extract, the flax egg, melted coconut oil, melted almond butter and the orange rind (make sure you don't add any of the white parts of the orange as they would make the cookies bitter)
  4. Incorporate the dry ingredients into the wet ones and stir to combine.
  5. Chop chocolate into medium chunks and add them to the batter.
  6. Chill dough for 20 minutes.
  7. Make balls out of the dough and flatten them a bit (but not too much as they will do so while in the oven).
  8. Freeze balls for 15-20 minutes.
  9. Line a baking tray with parchment paper and place the cold balls of cookie dough.
  10. Bake for 12-15 minutes or until golden (this depends on your oven, so make sure you check after 10 minutes).
  11. Cookies will harden as they cool.

Notes

To make the flax egg, mix together 1 tbsp. of ground flax seeds and 3 tbsp. water. Let it sit for 5 minutes.

    I’m in the mood for cookies Consuelo! Feed me please! And also – I noticed that you changed your recipe index. I was having problems with mine as well and was using the easy recipe plugin. If you were using this too, I recommend changing to ‘Recipe schema markup’. It’s exactly the same with the same customising options, but an updated version that is compatible with current wordpress. Only thing is, the two plugins can’t run at the same time so you’ll need to copy over any old recipes to the new plugin. I just copy and pasted all of mine into word and then back into the plugin. Hopefully that makes sense 😉

      Hey Rosie!
      Thanks a bunch for taking the time to help!! It’s such a pity that our old plugin stopped working :( I hate my new one but at least it works fine and the developers do update it and stuff.
      I don’t think I’ll end up going for the one you said since I have over 200 recipes that I’d need to copy and that’s way too crazy!! But thank you! x

        I found it hard to manage for 20 recipes so I can see why that would be a problem… it’s a shame there’s no other pretty plugins quite like that! The only other option I can think of is trying to revert wordpress back a few updates and see if that works? But then the problem is you’d be running a slightly older wordpress… Hmm…

          Uuuugh not! That screams problems to me haha. I was doing some research and the problem with the recipe card plug in is not that it isn’t compatible with the latelst wordpress update, but the fact that the owners stopped paying for the site where they stocked the recipes or something like that… I don’t know! But I don’t want to risk it with WordPress hahaha so I’ll stick to the ugly plugin for now! Thank you though xx

    Hi Consuelo! Yes, exams are the death of me. I have one in fifteen minutes! :( anyways, these cookies DO look delicious! Whenever I’m overwhelmed with laundry, I just put on a jacket, wear a shirt and leggings and hope for the best! XD
