Açai Coconut Cream Granola Tartalettes

As much as I love simple toast for breakfast (any PB + banana toast lovers among the crowd? Put those hands up!), it feels nice to switch things up from time to time. If you ever feel like you’re growing out of porridge, cereal, granola, smoothies and other simple but trustworthy breakfast foods… I’ve got something for you!

These granola tartalettes.

They’re cute as they can get (#instagrammaterial I’d say, am I right pals?), and also made from wholesome ingredients so you can feel good and energised in the morning. Tart for breakfast AND it’s healthy? Sign me up!

Perfect mix between an açai bowl (another favourite of mine! Especially with loads of toppings!), granola and fresh fruit – there’s something about these little tarts that everyone is going to adore! Also, have I mentioned that thin, extra-dark chocolate layer on top on the granola crust?

FLIPPIN’ YEAH.

You guys know I don’t have kids, but I can imagine these tarts would be an absolute hit with them! You know, because they feel like they are something special, but they’re actually made with really, really healthy ingredients so you can feel good about your kids (or yours truly) eating them.

Full of fiber thanks to those rolled oats so they can keep you full for hours. What else? Antioxidant-rich açai powder to promote skin and heart health (and to add the loveliest berry flavour!) and make you feel your very, very best! Then we have some almond flour, to add some healthy plant protein, good fats and lots of vitamins and minerals; a bit of raw cane sugar to make things a lil’ sweeter, and loads of fresh berries to get that vitamin C in.

Plus that extra dark chocolate! It’s an antioxidant feast in here!

It’s not only that they’re incredibly healthy, they’re also flippin’ delicious! The granola crust keeps crunchy for hours thanks to the layer of chocolate, which prevents the water from the coconut cream from transferring to the crust, making it soggy and disgusting. WATER ACTIVITY PEOPLE, it’s that important (and also a life-ruining concept that will hunt you forever and ever in uni #foodengineeringstudentprobs). Aaaaaaaand let’s not forget that, it’s all kind of delicious as well, just like every single thing related to granola. Pretty sure you’re going to dig that almond hint as well! So, so nice.

Then, as previously mentioned, we have that sinfully delightful layer of extra dark chocolate. I’m going to be all honest with you guys and confess that white chocolate is actually my fav kind of chocolate BUUUUUUT I still adore the intriguing undertones found in the darkest varieties of chocolate. I went for 90% cacao chocolate for these tarts, but feel free to use your favourite kind. However, I don’t think white chocolate or even milk chocolate would work as well, so keep that in mind!

Now, can we please talk about the açai coconut cream?

Holy guacamoly. Did I just die and went to heaven??? For those who don’t know it: I’m such a hardcore coconut cream lover, as shown by the dessert recipe index on this blog. I usually just add a bit of sugahhh and vanilla to my whip, but I recently got some of this fabulous Ora Organic açai powder and instantly thought it’d do well in desserts, apart from the usual (but still insanely good!) açai bowl. Was I right, my friends!!!! What a wonderful idea!! Açai powder simply adds such a fabulous, slight tang to the cream – it’s so good! Definitely a treat for all of us who enjoy berry-based desserts. I also love love love how Ora Organic products are all organic (as the name implies, duh) and ethically sourced. Plus, the product range sounds absolutely fantastic! Vanilla Chai protein? I so need to give that a go! I definitely recommed checking them out if you’re on the hunt for some new supplements!

Last but not least: let me tell you for like what’s probably the 83274983748th time about my never-ending love for fresh berries. Have I mentioned I LUV them?? Have I?????

They’re vibrant, they’re sweet, they’re tart and they’re basically the best lil’ fruits ever.

Açai Coconut Cream Granola Tartalettes

Ingredients

  • For the crust:
  • 100 grams rolled oats
  • 55 grams almond flour
  • 10 grams chia seeds
  • 60 grams raw cane sugar
  • 2 flax eggs
  • 45 grams almond milk
  • 15 grams coconut oil, melted
  • -
  • For the açai coconut cream:
  • 200 grams coconut cream or yogurt
  • 20 grams Ora Organics açai powder
  • 60 grams raw cane sugar
  • -
  • Toppings: fresh berries, agave syrup, nuts, seeds, etc...
  • 80 grams extra dark chocolate.

Instructions

  1. To make the crust:
  2. Preheat oven to 200ºC (400F)
  3. Whisk together oats, almond flour, chia seeds and sugar.
  4. Add in the flax eggs, oil and milk and whisk until combined.
  5. Let mixture chill for 15 minutes.
  6. Divide the mixture in 4 balls and press them into a baking tray lined with parchment paper until you have 4 flat rounds.
  7. Bake for 15-20 minutes or until golden.
  8. They'll be soft straight out of the oven, but they harden as they cool.

  10. To make the cream:
  11. If using coconut cream, whip it first with an electric whisker.
  12. Add in açai and sugar and whisk to combine.
  13. If using coconut yogurt, whisk it with sugar and açai until smooth.

  15. To assemble:
  16. Melt chocolate and coat the top of the tartelettes with it.
  17. Once it cools and hardens, top them with the açai cream.
  18. Place berries on top and enjoy!
