In the unlikely case you happen to have some muffins leftover:

I’ve gotcha covered.

See that ultra-decadent, luscious-looking concoction below? Yeah, that super chocolaty thingy lloking like it’s made with a ton and a half of sugar, 300 different ingredients and a ton of effort? Oh well: it’s just stale-ish muffins, chocolate mylk, a bit of coconut oil, unrefined sugar and flax eggs. Made with just one bowl in like, mere seconds.

AHAHAHAH I KNOW.

So, if you happen to be all odd, with inhuman self-control skills (aka you don’t go and raid the muffin container 3 times a day #notme) and a whole lot of muffins to put into good use: give this thing a go! It won’t take long to have your own pan of delicious, moist (I KNOW), chocolaty bread (muffin, more like) pudding.

And, if you happen to be like me and never have muffins on hand because… you ate them all… feel free to substitute whatever thing you can find.

List of things which are okay to use:

  • Storebought muffins
  • Other baked goodies like croissants
  • Bread

List of things that you shouldn’t be putting in pudding:

  • Your dog
  • Or hamster
  • Basically don’t go and put any living and breathing thing in there
  • alright
  • just in case you thought “whatever you can find” meant “your dog”
  • it didn’t

Now that we made things clear: let’s talk about the goodness of this bread/muffin/croissant/not dog pudding we’ve got here. It’s super chocolaty and soft, and topped with your personal poison of choice. I went with dairy free nutella because I’m a sucker for that buuuuut you could also melt some dark chocolate, throw it on top and call it a day. Still very bueno!

This pudding is made super chocolaty thanks to 3 ingredients: lots of chocolate chips hidden in the batter, the chocolatiest muffins you can find (if you use bread, add a tablespoon of cacao powder and 3-4 extra tablespoons of sugar) and my favourite Ecomil chocolate almond milk!

Just like all of the Ecomil range, it’s tasty, free of nasties and allergens such as milk protein and gluten and organic. This particular drink is delicious when drank chilled from the fridge and also used in baking and porridge. So good!

That’s it! That’s all you need to get yourself one easy but super tasty dessert 😉

Triple Chocolate Bread Pudding

Ingredients

  • 550 grams stale chocolate muffins
  • 500 grams Ecomil chocolate almond milk
  • 50 grams melted coconut oil
  • 3 flax eggs
  • 100 grams chocolate chunks/chips
  • 1-2 tbsp. organic cane sugar (optional)
  • 1 tbsp. vanilla extract (optional)
  • Topping: dairy free hazelnut spread, melted chocolate, chocolate custard, etc...

Instructions

  1. Start by preparing the flax eggs by mixing 3 tbsp. of ground flax seeds with 9 tbsp. of water and letting mixture chill for 10 minutes.
  2. In a bowl, combine milk, melted coconut oil, flax eggs and sugar and vanilla if using and mix intil smooth.
  3. Cut muffins into small cubes and soak them into the mixture.
  4. Add chocolate chips.
  5. Let this chill for 45 minutes in the fridge.
  6. Meanwhile, preheat oven to 180ºC (375F)
  7. Pour mixture into a small/medium sized baking pan and bake for 40-45 minutes.
  8. Let it cool before eating (it tastes best when chilled!) and top with some extra chocolate before eating. Enjoy!

    How could anybody put something living in this bread pudding?? Anyways, this is such a decadently beautiful creation of one of my family’s favorite desserts! The chocolate elevates everything!
