Pomegranate Peanut Butter Snack Bars + Mini iHerb Snack Review

Summer time, and the living is easy! You pals can’t imagine how I was looking forward to finally being free from exams and enjoying some well-deserved free time. One of my favourite ways to pass the time is going for trips in the nature. Bike trips, to be exact. Any other cycling aficionados among the crowd? If so, you’ll know how tricky it is to find the perfect snack to take with you everywhere. I’m a big fan of things like the classic peanut butter and jelly sandwich, but sometimes, you just need to have something *fancier*.

This time I’m partnering with the folks over at iHerb to bring you one super cool energy bar recipe. Made with all healthy ingredients to fill you with energy (very much needed during bike rides, right!) and super simply to make. All that you need is a bowl, no blender or food processor. How great is that?

These are a fun and nutritious spin on plain chips. As you guys know I’m a big fan of anything Thai inspired, and chili spice is my absolute favourite! I loved how crispy these chips were, and the fact they’re made of lentils made them do much more filling. Perfect snack to take with you if you plan to exercise!

SurfSweets Sour Worms

This wasn’t the first time I tried these… but I really, really needed to tell you about them! Sour gummies are one of my favourite things to snack on, but it’s hard to find a vegan version, and even more if you’d prefer one made without artificial ingredients. These Sour Worms tick all the boxes, and they’re the perfect snack for those of you who prefer a sweeter option!

Go Raw Choco Crunch Sprouted Cookies

Another sweet option for ya! All organic, free of GMO’s and nut & grain free, so they’re ideal for people suffering from allergies. Moreover, they are so tasty!

Earth Balance, Vegan Puffs, Aged White Cheddar Flavour

This has to be my favourite snack on the list, hand down! Can’t believe these are actually vegan, they taste so much like real cheddar! Also gluten and GMO free, so you’d better add them to your snack list asap!

Now, let me tell you guys about the star ingredients of these bars.

Now Foods, Better Stevia Liquid Sweetener, French Vanilla

This is the perfect way to sweeten your dessert (or breakfast, have you tried this on oatmeal? So yum!) without adding extra calories or sugar. And the vanilla hint is to die for! You only need a couple of drops to make it work, so the small jar goes a long, long way.

Peanut Butter & Co. Mighty Nut, Powdered Peanut Butter Vanilla.

I love love love love these powdered peanut butter blends so much! They work well to add a lovely peanut butter flavour to everything from desserts to porridge, and they’re also the perfect base to make protein bars. This vanilla flavour is a cool spin on the classic and it’s safe to say that I’m liking it a lot.

Navitas Organics Organic Pomegranate Powder

My newest addition to my superfood powders fam! I loved the flavour they added to these energy bars, and I like how this powder it’s so versatile that you can add it to things like smoothies or overnight oats as well. I cannot wait to try it on more recipes, really!

Now that I’ve told you all about these, shall we check out these homemade pomegranate peanut butter energy bars? They’re so easy to make and tasty that you won’t be able to make them just once 😉

 
Pomegranate Peanut Butter Snack Bars + Mini iHerb Snack Review

Yield: 8 bars

Ingredients

  • For the peanut butter layer:
  • 60 grams vanilla powdered peanut butter
  • 30 grams oat flour
  • 40 grams coconut oil
  • 5 drops vanilla stevia
  • 60 grams almond milk
  • For the pomegranate part:
  • 30 grams vanilla pea protein
  • 70 grams oat flour
  • 60 grams pomegranate powder
  • 50 grams coconut oil
  • 30 grams almond milk
  • Optional: dried berry bits, dairy free white chocolate, chocolate chips...

Instructions

  1. In a bowl, mix together powdered peanut butter and oat flour.
  2. Add in melted coconut oil, stevia and almond milk and stir to combine.
  3. Form a ball and let it chill while you prepare the pomegranate part.
  4. For the pomegranate part, stir together in a bowl all pomegranate powder, protein powder and oat flour.
  5. Add in melted coconut oil, mix and stevia and stir to combine.
  6. Line a small baking tray with parchment paper and press the peanut butter mixture inside.
  7. Top with the pomegranate mixture.
  8. If you'd like to, add in dried berries or chocolate chips (I added dried raspberry bits)
  9. Flatten with a rubber spatula and let bars chill in the fridge for 5-6 hours.
  10. Aditionally, you can drizzled some melted dairy free white chocolate on top.
  11. Enjoy!

Notes

Oat flour is made from grinding rolled oats but you can buy it too. These are best kept in the fridge but they do travel well if you need them to.

    OH YES, I LOVE me some vegan snacks! Fajita Hippeas are my favorite savory snack along with Beanfields chips (no flavor preference), and for sweets, I love me some Larabars, R bars, Justin’s peanut butter cups, SurfSweets gummy bears, powdered peanut butter, and the Go Raw protein bars! SO YUMMY. These peanut butter snack bars look so crack-like addictive! I think it would be so dangerous if I try to make them!
