Chia Zucchini Chocolate Brownies

It’s that time of the year when my garden is OVERFLOWING with zucchinis.

It’s also that time of the year when Game of Thrones is about to come back.

Which has nothing to do with the fact that I made chia zucchini brownies BUT you know I like GoT a lot so I had to let you know.

Now that you’re aware that:

a) I’ve got way more zucchinis than I know what to do with them.

b) I’ve got a probably too unhealthy obsession over men with beards and swords called Jon Snow.

Let’s get back to those brownies: soft, dense and chocolaty brownies packed with goodness. I meannnnnnn I did put one entire zucchini in there so they might or might not qualify as salad. Plus, I added a ton of chia seeds to the batter, which, unless you’ve spent the last 4 years or so living under a pineapple under the sea with no access to the internet (poor u), you’ll know to be superfoods.

These beauties are lower in sugar and fat than the average delicacy. Grated zucchini adds a lot of moisture to the batter, so you can cut down on the amount of oil used… which is a fabulous thing because, although deliciously nutritious, coconut oil is rather expensive, while zucchinis are FREE.

To cut back on sugah, I used some vanilla flavoured stevia drops aka my new drug. I love love love these because they don’t taste metallic like other brands do (like, am I eating dessert or is my mouth bleeding!!!!) and they add the most delicious hint of vanilla. A little goes a long way so they’re pretty unexpensive too. What’s not to love?

Last but not least, we’ve got a deliciously creamy chocolate coconut topping. Can I get a “FLIP YEAH”?

Not only is it, like the most delicious thing ever, but also super quick to put together and easy to make.

Chia Zucchini Chocolate Brownies

Ingredients

  • 450 grams zucchini, grated
  • 130 grams coconut oil
  • 100 grams almond milk
  • 30 grams chia seeds
  • 150 grams coconut sugar
  • 5-8 vanilla stevia drops
  • 70 grams cacao powder
  • 320 grams all-purpose flour
  • 150 grams dark chocolate
  • -
  • For the topping:
  • 100 grams dark chocolate
  • 50 grams coconut cream

Instructions

  1. Preheat oven to 180ºC (375F)
  2. Grate or shred the zucchini.
  3. In a big bowl, mix zucchini, chia seeds, melted coconut oil, milk, stevia and sugar.
  4. Add in cacao and flour and stir to combine.
  5. Add chocolate chunks and stir to divide evenly among the batter.
  6. Line a brownie baking pan with parchment paper and pour the batter on top.
  7. Bake at 180ºC (375F) for 40-45 minutes.
  8. To make the topping, melt together on a saucepan chocolate and cream and whisk until smooth and glossy.

    Yuuumm!!! Love chocolate and zucchini, it’s amazing how well they work! Love the look of a chocolatey brownie even more – it has vegetables, so it’s healthy and I can eat the whole lot, yes? :)

    Zucchini brownies are LIFE. I absolutely would love to make them again! Maybe if you eat enough of these brownies, you’ll have consumed a salad’s worth of zucchini!
